  • 3 racks St. Louis Ribs
  • Black Pepper Rub(your favorite)
  • Seasoning Blend(all-purpose rub)
  • 10 oz (283 g) Water
  • 10 oz (283 g) Apple Cider Vinegar
  • 1 oz (28 g) Worcestershire Sauce
  • BBQ Sauce(your favorite blend)
  • Honey(warmed, to thin sauce)

Season the ribs

Skip the trimming, slathering, and membrane removal. Simply apply black pepper rub and seasonall blend directly to the ribs. Let them sweat out at room temperature for about 30 minutes while your smoker warms up.

  • Use whatever rubs you have on hand
  • The sweat time helps the rub adhere and the meat come to temp

Prepare the spritz

Mix together 10oz water, 10oz apple cider vinegar, and 1oz Worcestershire sauce in a spray bottle. This keeps the ribs moist and adds flavor layers during the cook.

  • The 50/50 water and ACV ratio is key
  • A little Worcestershire adds depth without overpowering

Low smoke at 180°F (82°C)

Place the ribs on the smoker at 180°F (82°C). Bunch the racks up a little instead of laying them flat - this helps them cook into a nicely formed rectangular shape. Smoke for 1 hour at this low temp to get good smoke penetration.

Bump to 250°F (121°C) and build bark

Raise the smoker temperature to 250°F (121°C). Continue cooking, spritzing every 45 minutes to 1 hour, until you're happy with the bark formation.

  • Spritz lightly - you don't want to wash off the rub
  • Bark should look dark and set before wrapping
  • Go by look and feel, not strict timing

Wrap with sauce

Once the bark looks right, give the ribs one final spritz. Mix your BBQ sauces (Sriracha and Kansas City) with warm honey to thin it out. Brush sauce on the ribs, then wrap fully in foil.

Cook to tender at 275°F (135°C)

Raise the smoker to 275°F (135°C) and continue cooking until the meat is probe tender. For fall-off-the-bone ribs, cook until a Thermapen slides in easily. Look for bone pullback as a visual indicator.

  • Bone pullback of 1/4 inch is a good sign
  • Competition ribs stay on the bone - we want fall-off-the-bone

Foil boat and set the sauce

Open the foil to create a boat shape around the ribs. Add a little more sauce and return to the 275°F (135°C) smoker for about 15 minutes to set and caramelize the sauce.

  • The foil boat lets the sauce tack up while keeping sides protected
  • Don't sauce too heavily - you can always add more when serving

Rest and serve

Close the foil and let the ribs rest for about 45 minutes. This allows the juices to redistribute. Slice and serve - make extra so you can share with neighbors and friends or eat throughout the week.
