Lessons learned. Unlike a a regular oven, the Anova is very accurate temp-wise and only swings by 3 degrees. So my normal bake temp of 375 can likely be pulled down to 350 as I noticed them browning a lot quicker than my normal oven. Also, this is a convection oven so a fan blows the heat around which likely also plays into temp diffs. 

It was really nice to proof at exactly 80 degrees with 75% humidity. That’s going to make things a lot more consistent and predictable.

Ingredients

Recipe yield: 8 buns

  • 180 ml (12 tbsp) Milk(3/4 cup, warmed to 105°F)
  • 21 g (0.7 oz) Honey(1 tbsp (or 1 tbsp sugar))
  • 28 g (1 oz) Butter(2 tbsp, melted (unsalted, or reduce salt if salted))
  • 7 g (0.2 oz) Instant Yeast(1 packet (2-1/4 tsp))
  • 1 Egg
  • 420 g (14.8 oz) Bread Flour(3-1/2 cups)
  • 5 g (0.2 oz) Salt(1 tsp, or less if using salted butter)
  • 1 egg Egg Wash(beaten)
  • Sesame Seeds(optional)

Equipment Needed

  • Mixing bowl or stand mixer
  • Bench scraper
  • Baking sheet
  • Parchment paper
  • Kitchen towel or plastic wrap
  • Pastry brush (for egg wash)

Instructions

Activate Yeast

Combine milk, honey, melted butter, and yeast. Stir together until well mixed. Let sit for a few minutes until yeast becomes frothy and activated.

Tips

  • Microwave milk for 1 minute to get it warm
  • Yeast should bubble and foam - this means it's active
  • If using salted butter, reduce salt to less than 5g

Mix Dough

Add egg, flour, and salt to the yeast mixture. Mix all ingredients together until they form a sticky dough.

Time:2 minutes

Tips

  • Dough will be sticky - this is normal
  • Mix just until combined

Rest Dough

Cover and let the dough sit for 5 minutes to allow the flour to absorb the liquid and the gluten to relax.

Time:5 minutes

Tips

  • This autolyse makes kneading easier
  • Cover to prevent drying

Knead

Scrape dough onto a lightly floured surface and knead for about 10 minutes until a smooth ball forms.

Time:10 minutes

Tips

  • If dough feels sticky, use bench scraper or move hands faster
  • Don't add too much flour - slight stickiness is good
  • Dough should become smooth and elastic

Divide & Pre-Shape

Divide the big ball into smaller balls. Use 120g for Big Mac style buns (with middle section), or 100g for normal buns.

Tips

  • Use a scale for uniform buns
  • 8 buns at 100g each = perfect burger size

Shape Buns

Shape each piece into a round ball by tucking the edges underneath and rolling between your hands. Place on parchment-lined baking sheet, leaving space between each bun.

Tips

  • Smooth surface = smooth tops after baking
  • Leave 2-3 inches between buns for expansion

Flatten & Proof

Press down on each bun to flatten slightly. Cover with kitchen towel or plastic wrap and let rise for 15 minutes until they puff up slightly.

Tips

  • IMPORTANT: If kitchen is cold, place in oven with light on (don't turn oven on)
  • Oven light creates perfect 80°F environment
  • Buns should puff up noticeably

Egg Wash & Bake

Preheat oven to 375°F (190°C). Brush tops with beaten egg and optionally sprinkle sesame seeds on top. Bake for 12-15 minutes until golden brown.

Tips

  • Egg wash creates shiny golden crust
  • Don't skip preheating - important for even baking
  • Buns are done when golden brown and sound hollow when tapped

Cool & Serve

Remove from oven and let cool on a wire rack. Slice in three sections for Big Mac buns or two sections for regular buns. Butter and toast on pan or griddle before assembling burgers.
